Naturally Detoxifying Beet Soup

This is a great soup for natural detoxification. Fresh Beets support liver function, are full of fiber and are relatively found in all grocery stores. This recipe can make 4 bowls and takes less than an hour from start to finish. Just remember BEETS bleed and stain so wear that chef's apron proudly.


What you will need:

A High powered Blender

2 tablespoons Extra Virgin Coconut Oil

2 large organic beets, scrubbed, ends cut (diced for quicker blending)

3 organic garlic cloves, minced

1 tablespoon grated organic ginger

1⁄2 teaspoon Ground Turmeric

1 teaspoon Ground Coriander Seed

1⁄2 teaspoon Salt

2 cups water

1 can of Coconut Milk (no sugar added)

1 lime

chopped organic cilantro (for garnish)

chopped Dry Roasted and Salted Cashews (for garnish)

INSTRUCTIONS


1. Heat a pot/deep pan over medium heat. Add coconut oil, swirl to melt and then add beets. Sauté until limp, stirring occasionally, for 10 minutes

2. Add garlic, ginger, and spices; cook 1 minute, stirring frequently

3. Add water and bring to a boil. Reduce heat to simmer and partially cover. Simmer, stirring occasionally, until the beets are fork tender, 10-15 minutes


4. Squeeze one lime and 2/3 of the coconut milk

Then blend until smooth. ( You might have to do this in small increment batches)


5. Return soup to pot for just enough time to reheat it a bit


Lastly, serve into bowls and add garnishments of lime, cilantro and/or cashews


Enjoy!
