Recipe: Quick and Delicious Breakfast Tofu Scramble

Tofu is made from soybeans. Honestly, tofu is really only made up of 3 main ingredients so as you are shopping be mindful.(Water, soybeans and magnesium chloride)

Tofu is such a versatile plant based option; it will quite literally take the taste of your seasoning choice as well as the texture of how you choose to mold it.

Tofu is a good source of iron & protein. It is cholesterol free and sugar free.

Ok let’s get into the recipe.


Ingredients (Serves 1-2)

⅔ Container of Organic Extra Firm Tofu- Pressed Out

1 tbsp. Olive Oil

¼ finely sliced onion (optional)

½ cup halved cherry tomatoes

1 cup of Fresh Spinach (or Kale)

½ tsp Pink Himalayan Sea Salt

½ tsp fresh Garlic (if Garlic is your jam)

½ tsp turmeric (for the Yellow color + health benefits)

¼ tsp chili powder (optional for spiciness)


Steps

In a skillet on low-medium heat add your oil.

Add in the sliced red pepper, red onion and garlic.

Cook for about 2 minutes, while stirring.

Add the tofu to the skillet, using your fingers to crumble the tofu or use a fork to break apart the tofu.

Add the spinach + tomatoes (ex. Kale or spinach)

Cook while stirring.

Add your spices, turmeric, fresh cracked pepper, Himalayan sea salt.

Cook and stir for about 1 minute longer.


Plate the food, top with avocado slices for healthy fats.

Serve with your favorite slice of toast or gluten free English muffin

(I like to use a bit of Earth balance butter on Ezekiel Bread)

Tip for Pressing out the Tofu Block

Wrap the tofu block in 2 paper towels.

Place it inside of your strainer, inside of your sink.

Then place a heavy gallon of water or cans of beans on top of the wrapped tofu.

Leave it there for 15 minutes.
